Easy Mexican Rice

This recipe is so simple, and yummy, perfect for anyone
   that's too lazy to cook an actual meal. It's also easily
   altered for anyone's tastes. Prep Time: approx. 5 Minutes.
   Cook Time: approx. 1 Hour . Ready in: approx. 1 Hour 20
   Minutes. Makes 4 servings.

1 1/2 cups uncooked brown rice
3 cups water
1 (1 ounce) package taco
   seasoning mix
1 (15.25 ounce) can kidney
   beans, drained
1 (15 ounce) can tomato sauce
1 (14.5 ounce) can diced
   tomatoes, drained
salt and pepper to taste
1/2 cup shredded lettuce


Directions
1 In a saucepan bring 3 cups water to a boil. Add rice
   and stir. Reduce heat, cover and simmer for 45 minutes.
   Remove from heat and let stand for 15 minutes.
2 Stir in taco seasoning, kidney beans, tomato sauce,
   diced tomatoes, salt, pepper and lettuce.
3 Cook over medium heat until heated through.
