Coconut Rice

Basmati rice is simmered in coconut milk, instead of
   water, giving it a rich flavor. Prep Time: approx. 5 Minutes.
   Cook Time: approx. 25 Minutes. Ready in: approx. 30
   Minutes. Makes 6 to 8 servings.

2 1/2 cups Basmati rice
4 (10 ounce) cans coconut milk
1 pinch salt


Directions
1 In a large saucepan over high heat, combine rice,
   coconut milk and salt; bring to a boil.
2 Reduce heat, cover and simmer for 20 to 25 minutes, or
   until liquid is absorbed and rice is tender.
