Vegan Goddess Dressing

A delicious thick and creamy dressing - great for salads
   which consist mostly of greens. I also like it on baked
   potatoes. You can vary the taste by trying different types of
   vinegar, ie: apple cider vinegar or red wine vinegar. Prep
   Time: approx. 10 Minutes. Ready in: approx. 1 Hour 10
   Minutes. Makes 2 cups (16 servings).

1 (10 ounce) package soft
   silken tofu
1/3 cup olive oil
1/4 cup chopped fresh basil
1/2 teaspoon rice vinegar
1/4 teaspoon salt
3 teaspoons tamari


Directions
1 Whisk together the tofu and olive oil until a thick
   mayonnaise like consistency is reached.
2 Add the herbs, vinegar, salt and soy sauce; mix well
   and refrigerate.
